Summer is known for firing up the grill, but sometimes you’re not quite sure what to cook. Here are a few ideas to help you have fun with your gas grill and get out of your next barbecue rut.
Beer Can Chicken
If you’re doing some backyard grilling and drinking beer, why not save a little beer for your chicken? Use a small roasting chicken, slathered in your favorite barbecue sauce or marinated for this recipe. Take a can of beer that is about half to three-quarters full and use it prop up your chicken. Allow your chicken to sit on top of the beer can on the grill until done. Make sure you use a beer that you enjoy drinking because the flavor of the beer will help season the meat.
Citrus Marinated Shrimp
Nothing beats grilled shrimp. You’ll need soaked wooden skewers or metal skewers. Try using your favorite citrus flavors for the marinade, or use a mixture of citrus flavors, such as lemon, lime, grapefruit and/or orange. Add a splash of olive oil and minced garlic for extra flavor. You can decide which direction to go.
For a kick, sprinkle in some red pepper flakes or chop up a hot pepper. If you want a sweet and citrus flavor, consider adding some pineapple juice or brown sugar. Marinade your shrimp for 20 minutes, but not too long, because the acid will start to cook the shrimp. Grill until done. You can eat the shrimp on their own or try using them in shrimp tacos, with cilantro and avocado.
Dry Rub Ribs
Mix up your own dry rub for ribs. Include paprika, cayenne pepper, cumin, brown sugar, salt and pepper. You can jazz up a basic dry rub mix with your own favorite flavors. Once you rub the seasoning on your ribs, try wrapping the ribs in aluminum foil and cooking them on indirect heat. Low and slow is the way to go. You want your ribs to cook until they are tender, without burning or drying out. Once the ribs are cooked to your liking, you can remove them from the foil and cook them on direct heat for some grill marks and extra flavor.
